Ingredients for the sweet potatoes

  • 2 diced sweet potatoes
  • olive oil
  • salt
  • freshly ground pepper
  • smoked paprika

Ingredients for fava beans

  • 500 gr. chopped fava beans
  • 1 onion, coarsely chopped
  • 1 clove garlic, chopped
  • 1,500 ml warm water or vegetable stock
  • 2-3 sprigs of fresh thyme
  • olive oil
  • salt
  • freshly ground pepper
  • 100 gr. pumpkin seeds

Implementation

1) Soak the fava beans in a bowl of cold water for about 30 minutes and drain.

2) Put the sweet potatoes in a baking tray lined with parchment paper, sprinkle with olive oil and sprinkle with salt, freshly ground pepper and paprika. Bake in a preheated oven at 200°C for 40 minutes until soft and colored.

3) Prepare the fava beans. In a pot, heat 4 tbsp. olive oil and sauté the onion for 2-3 minutes until soft.

4) Add the garlic, saute for 1 minute and add the drained fava beans.

5) Add salt, freshly ground pepper and thyme and pour over the hot water. When it boils, lower the heat and let it simmer for about 30-40 minutes. Every now and then we skim the surface of the water with a slotted spoon.

6) Remove from the heat, add the baked sweet potatoes, reserving a few pieces for serving, and mash well with a blender (or a blender with a heat-resistant jug).

7) Serve the fava beans with the reserved baked sweet potatoes, the pumpkin seeds and some fresh thyme.
